Bharli Vangi/Stuffed Brinjals



  • Brinjal: 250 gms
  • Oil: 4-5 tbsp
  • Onion: 1
  • Cumin Seeds: 1 tsp
  • Curry leaves:3-4
  • Jaggery : small  lemon sized
  • Coriander leaves: 1/2 cup
  • Garlic cloves: – 5-6
  • Ginger: 1 inch
  • Malvani Masala: 1 tbsp (instead you can use 1tsp chilli powder and 1 tsp garam masala)
  • Fresh Coconut: 1 cup
  • Roasted peanuts:1/2 cup
  • Green Chilli: 2
  • Salt: to taste


Wash the bringal and slit them into 4 without cutting them till the end, also do not cut the crown of brinjal.IMG_20170620_115116

Grind a paste of coconut, coriander leaves,ginger, 3-4 garlic, green chilli and peanuts and salt.IMG_20170620_115016

Stuff the ground mixture in the brinjal and keep

In a kadhai heat oil, Once oil is hot add jeera and chopped garlic and curry leaves.IMG_20170620_115637

Now add onions and saute well, then add  turmeric and malvani masala,mix well and add jaggery,IMG_20170620_115958

After 2 mins place all the stuffed brinjals on the onion mixture and add the remaining ground paste on the brinjal.IMG_20170620_120533

Cook for 3-4 min and then carefully turn them over. cook the brinjal completely and then switch off  the flame.IMG_20170620_121015

Serve hot with bhakris, rotis or steamed rice.
