Baigan Fry/ Eggplant Fry

Baingan fry are pan fried or shallow fried eggplant with marination of spices.Baigan/ Eggplant fry is made in different ways. This recipe is one of the baigan fry which I make. I will soon post other variations of baigan fry and other baigan recipes.

I love eggplant in any form, fried, mashed sauted etc. it is one of my favourite vegetablefinal1


Eggplant/Baigan: 1 big

Gramflour/Besan: 2 tbsp

Red chilli powder : 1 tsp

Turmeric: 1 Tsp

Salt: As per taste

Lemon juice: 1 tsp

Coriander powder: 1 tsp

Cumin Powder: 1 tsp

Garam Masala: 1 tsp

Ginger-Chilli paste(optional): 1 tsp

Black pepper powder(optional): 1tsp

Oil: 2 tbsp


Slice the eggplant in to round shape and rinse with water and pat dry with kitchen towel.

Take all the other ingredient except oil in a plate.

Mix these spices with 2 tbsp water to form a paste.

Apply the paste to the eggplant and keep it for 10-15 mins

Heat oil in a pan and then place the marinated eggplant in the pan.

Cook the eggplant in low to medium heat for 4-5 min one side and  turn the eggplants and cook another side.

Prick a knife and check if the eggplant is cooked.

Switch off the flame and serve hot.
